Warm Broth Instead of Ramen

I love Cup of Noodles mostly for it’s broth. The noodles are kind of plain, but it’s so convenient. Plus, the broth really makes me feel warm and cozy on a cold day. If you look at the labels though, you start to worry about what you’re actually doing to yourself. So I wondered, could I mix my own together in a convenient amount of time? without all the junk I don’t want. Turns out, it wasn’t difficult at all.

Amy’s Nearly-Instant Broth

I suggest you use low sodium options if you’re lowering your salt intake.

Ingredients:

  • 6 cups of water and 6 t. beef or chicken bullion (or 6 cups of Canned broth)
  • 1/4 t. Black Pepper
  • 1 T. Garlic – minced (I buy it by the jar) (or 1/2 T. garlic powder)
  • 1/4 t. Basil
  • Sprinkle of Cayenne (optional)
  • Sprinkle of Red Pepper Flakes (optional) I like mine spicy!
  • 1/4 t. Garlic Salt (optional)
  • 1/2 bag of frozen bell peppers and onions
  • Various frozen vegetables you have on hand – I used broccoli, spinach, and green beans (I try to keep a variety of vegetables on hand for cooking convenience)
  • Drizzle of Sesame Oil (optional – I enjoy the aroma)

Directions:

Dump in a saucepan and bring to a soft boil for about 5 min., pour, and enjoy. Save remaining.

 

 

Philly Cheesesteak Salad

Cheese steak sandwiches, the ultimate comfort food. Growing up, my mother fried up Steak-Umms and served on a french roll or sourdough. While the rest of my family eats their sandwiches, I create a salad with the same comfort flavors.

Amy’s Cheese Steak Salad

Salad:

  • 2-3 Steak-Umms fried and seasoned with salt
  • Salad Greens of your choice
  • Grated cheese (I use cheddar, but you can use any)
  • Tad of Butter
  • 1 Green bell pepper – Julienned
  • 1 Red bell pepper – Julienned
  • 1 small onion – Juilienned
  • Tamed Jalapeno Slices

Dressing:

  • Mayonaise
  • Mustard (Yellow, Spicy, or Dijon)
  • Paprika

Directions:

Make the dressing ahead of time. Adjust the amount to taste.

Fry Steak-Umms. Saute the peppers and onion slices in butter and drippings from the steak. (Salt to taste) Place salad greens of your choice on a plate. Slice steak into bite size pieces, add to salad with a portion of the peppers and onions. Place a few slices of jalapenos on top and top with grated cheese. Drizzle dressing over the salad and mix.

Next time, I’m going to try to create this bell pepper stuffed cheese steak instead of salad. I’ll let you know how it goes.

London Broil

I found a london broil recipe similar to the one I make in my crock pot.

Amy’s Crock Pot Garlic Peppered London Broil

  • 1 – London Broil
  • 1 t. Garlic Salt
  • 1-2 t. Fresh Cracked Black Pepper
  • 1 T. minced garlic
  • 1/2 c. beef broth

Put all the ingredients in a covered crock pot on low for 8 hours or until desired doneness.

Reinventing Fried Rice

Since I mentioned Spam yesterday, I thought I’d talk about my mother’s fried rice. She always make it with Spam, cubed and fried to a crisp brown. While I love it, the rice is not so carb friendly. Instead, I add more vegetables and enjoy the same flavors without the carbs.

When I started this journey last week, I found that I can still feel satisfied without the carbs.

ZUCCHINI RICE – Prepare separately.

  • Grate 1 zucchini and add to a saucepan with 1 T. Butter, salt, and pepper.
  • Let cook 4-5 minutes.

SPAM STIR FRY (or chicken, or beef, or pork, or kielbasa, or tofu, or meatless…)

Ingredients:

 

  • 1 can of Spam, cubed (or any protein. I just love Spam for it’s bacon like saltiness)
  • Sesame Seed Oil
  • Frozen stir fry vegetables or fresh cut vegetables like onions, bell pepper, snap peas, water chestnuts, cabbage, carrots, green beans, snap peas, broccoli, cauliflower, …
  • Garlic
  • Soy Sauce
  • Salt
  • Pepper
  • 1 egg
  • Sesame Seeds
  1. Fry Spam in a hot wok until crisp.
  2. Prepare the grated zucchini rice.
  3. Add about 1 T. of Sesame Oil and heat.
  4. Add vegetables. If you’re cutting fresh vegetables, you will need to cook them a little longer than frozen vegetables.
  5. Add salt to taste, pepper, and soy sauce (about 2 T.),
  6. Add scrambled egg and garlic to pan.
  7. Finish cooking and add to the top of the shredded zucchini.
